Recipe thyme roasted mushrooms

Serves 2


4 portobello mushrooms, or field mushrooms
Olive oil
Fresh thyme
Sea salt + cracked black pepper
Seeded bread, toasted
1 garlic clove, cut in half
Marinated goat's cheese


Preheat oven to 180°C (fan forced).

Place mushrooms on a baking tray, gills up. Drizzle with olive oil, sprinkle over fresh thyme leaves and season with salt and pepper.

Roast mushrooms in oven for 20-30 minutes, or until just tender. 

Rub a thick slice of toast with garlic, top with a drizzle of olive oil, crumbled goat's cheese and roasted mushrooms. Sprinkle over extra fresh thyme and sea salt to serve.
