Recipe special fried rice

Serves 2


1 tbsp peanut oil
1 lap cheong sausage, roughly chopped
2 cloves garlic, finely chopped
1 red shallot, finely sliced
10-15 green beans, cut into 5mm rounds
1 spring onion, sliced
2 tsp light soy sauce
1 tbsp oyster sauce
½ tsp sesame oil
½ tsp Shaoxing wine
Pinch of white pepper
3 cups cooked jasmine rice
2 fried eggs, to serve
Coriander, to serve
Chilli jam or sauce, to serve


Heat peanut oil in a large frying pan over high heat. Add lap cheong and cook for 1 minute or until slightly crispy. Add garlic and shallot and cook for a further minute until fragrant.

Add remaining ingredients and toss to combine. Serve immediately with a fried egg, fresh coriander and chilli jam.
