Smashed cucumber salad
Serves 2 as a side dish
2 Lebanese cucumbers
1 clove garlic, finely chopped
1 tsp dried chilli flakes
1/2 tsp Sichuan pepper, crushed in mortar and pestle
2 tsp black vinegar
2 tsp soy sauce
1/2 tsp caster sugar
1/2 tsp sesame oil
Pinch of sea salt
1 large red chilli, finely sliced (optional)
Cut cucumbers into chunks about 5cm long. Use your palm to squash the pieces until they break slightly. Transfer to a medium mixing bowl.
Combine remaining ingredients in a small mixing bowl and stir to dissolve the sugar.
Add dressing to cucumbers and stir to combine. Allow to marinate for 5-10 minutes before serving.
