Salt + szechuan pepper tofu


Serves 4 as an entree


1L vegetable oil
500g silken tofu, cut into 5cm cubes
1 cup cornflour
1/2 tbsp toasted Szechuan peppercorns
1/2 tbsp sea salt
1/4 tsp white pepper


Heat oil in a medium saucepan to 180*C.

Place cornflour in a bowl; add tofu and carefully coat.

Fry in small batches for 2-3 minutes or until just starting to turn golden. Drain well.

Use a mortar and pestle to roughly grind Szechuan pepper. Combine with salt and white pepper.

Place tofu in a large bowl, add spice mix and toss to coat. Serve while hot.
